Yummy Healthy Meals

I just received my new cookbook, The Eat Clean Diet Cookbook. It has the best recipes in it and I can’t wait to try them all! I thought I would share a couple with you.

Sweet Potato FriesSweet Potato Oven Fries
Ingredients:
*olive oil cooking spray
*fresh rosemary
*1 tsp chili powder
*1 tsp ground cumin
*1 tsp paprika
*1 tsp kosher salt
*1 tsp ground black pepper
*2 medium sweet potatoes, scrubbed

1. Preheat oven to 400 degrees F
2. Spray baking sheet with olive oil spray and spread rosemary sprigs on sheet in single layer, covering entire surface. Mix together all ingredients, except sweet potatoes.
3. Square off potatoes and slice into “steak fries”. Lay strips of potato on rosemary in single layer. Sprinkle generously with seasoning mixture. Spray generously with olive oil spray. Bake 20 minutes.
4. Spray gain. Return to oven for about 25 minutes more or until fries are golden and puffed.

Turkey burgerLow-Fat Turkey Burger
Ingredients:
*1 cup high protein cereal flakes
*1/2 cup skim milk
*3 tsp instant low-sodium chicken bouillon
*3 TBSP minced onion
*2 egg whites
*1lb. lean ground turkey

1. Combine first five ingredients in a large bowl. Let milk soak into the cereal flakes for 5 minutes. Add lean ground turkey and mix well. Shape into patties and grill!
2. Serve with lightly toasted Ezekiel buns or whole-grain buns.

There are many others such as Breakfast Fruit and Nut Cookies, Quinoa with Sundried Tomatoes and Moroccan Chicken and Lentils. Each recipe has the number of servings and the nutritional value of each serving, which is nice to know when you are tracking your calories. So go pick yourself up a copy of The Eat Clean Diet Cookbook and start burning some fat!
